Apple Butter Bars

ingredients

½ cup unsalted butter, at room temperature ¾ cup sugar ¼ cup light brown sugar, packed

1 tbsp fancy molasses

¾ cup sour cream ½ + 1½ cup apple butter

2 large egg yolks

1 large egg 2 cups pastry flour

½ cup whole wheat flour

1 tsp cinnamon ¼ tsp nutmeg

¾ tsp baking powder

¾ tsp baking soda ½ tsp fine salt
1 cup old fashioned rolled oats    

directions

  1. Preheat oven to 325 degrees F. and grease a 9 x 9-inch pan and line bottom with parchment paper.
  2. Beat butter, sugar and brown sugar together until smooth. Stir in molasses, sour cream and ½ cup apple butter. Stir in yolks and eggs. In a separate bowl, sift pastry flour, whole wheat flour, cinnamon, nutmeg, baking powder, baking soda and salt and gently stir into butter mixture. Fold in oatmeal.
  3. Spread half of the batter into prepared pan. Spoon an even layer of the remaining 1 ½ cups of apple butter over the cookie layer. Cover evenly with remaining cookie batter. Bake for 35 to 40 minutes, until cookie batter is just cooked through and apple butter is bubbling.
